Crunchy granary loaf with sweet sundried tomatoes and fresh basil.

Ingredients
  • 250g Granary bread flour
  • 7g dried yeast
  • 1 tblsp oil
  • 1/2 - 1 pint luke warm water
  • half a jar of sundried tomatoes in oil (chopped)
  • 7-8 sprigs of fresh basil (leaves roughly chopped)

Directions
1. Put the flour and yeast in a large mixing bowl together with the chopped sun dried tomatoes, basil and oil. 2. Pour in the water (bit at a time) and mix together with your hands until it becomes a dough. 3. Carefully tip out the dough onto the work surface and knead for at least 10 mins. 4.Mould the dough in a round loaf shape and put back in the mixing bowl. Cover with a plastic bag and leave to proove until it has doubled in size (approx 45 mins). 5. Carefully tip out the dough and flatten gently. Again, mould back into a loaf shape and place on a floured board, again covered with a plastic bag until it has doubled in sixe. 6.Pre-heat the oven at its hottest temperature. Put in a baking tray to pre heat also. 7. Put the bread on the pre-heated baking tray, cut grooves in the surface (optional) and place in the oven for 10 minutes. After 10 mins, reduce the temperature to 200 degrees celcius and leave to cook for approx 20-25 mins. (The base of the bread will sound hollow when cooked). 8. Enjoy warm from the oven with butter.

need to check the weights i think here. I only use 1/2 pint of liquid with 500g flour to make all my bread and dont forget 1/4 tspn salt too
