By the way I agree about Denhay - they are gods of Slow Food. I heard the daughter was going into chacuterie.
Forget chilli sauce or bramble jelly. Got to be thick spread of marmalade to bring out the bacony taste. preferably home made Seville...
I hate to dispute but ...
I would take your back or streaky and fry gently to get the fat running nicely. When crisped to taste move the bacon somewhere warm (edge of a big pan would work). Then take reasonably thick slice of fresh white (large enough to slice in two for your butty) and lie in the pan to sizzle in the bacon fat until nicely golden but not too much. Cut bread in half, lay bacon on the fried bread side. For a real treat (passed on tip from my granddad) a dollop of brable jelly and a grate of black pepper finishes the sandwich a treat. Enjoy!
Denhay ran an ultimate bacon sandwich recipe competition and this was my entry. After making it the first time with Denhay products it sort of stuck (and they're just round the corner from me - I know the family and daren't change it now!!)

i must admit to liking their produce many moons ago when they started up & she came to our hotel in hampshire to promote her wares & the rest as they say is history
