Come and join our River Cottage chefs for a hands-on, practical-led cookery course based around all things game.
You’ll be doing the hard work on this day as we will teach you all the preparation and cookery skills you will need in order to get the most out of the wild meat in your larder. We will soon have you skinning and jointing, plucking and drawing, curing and smoking, and at the end you will learn to cook a modern dish using game as the main ingredient.
After all of this, you will sit down to a delicious lunch where you will make the first course and our River Cottage chefs will do the rest. By the time you travel back up the hill here at Park Farm, you’ll have all the confidence you need to get cooking with the best local, seasonal and sustainable game ingredients.
Course Details
Arrive: Tractor ride down to the farm
Welcome: Meet your host over a morning tea or coffee and tasty River Cottage treats.
Practical session one: We will show you how to skin and joint a rabbit and how to cure the meat.
Practical session two: You will learn how to skin and remove the meat from a game bird.
Break for Coffee
Practical session three: Using the ingredients you have already prepared, you will then make a game pâté to be taken home at the end of the day.
Practical Session Four: Learn how to hot smoke and roast a rabbit saddle.
Practical Session Five: You will learn a modern dish that is quick and simple to make at home and will give you the confidence to spread your wings. This could be pheasant fajitas, game bolognaise, rabbit burgers or a duck curry.
Lunch: After enjoying some of your hot smoked and roasted rabbit saddle as a starter, the River Cottage chefs will treat you to the rest of your sumptuous lunch using the best local and seasonal fare.
Q&A: By now you will be bursting with ideas and no doubt have a few questions to ask and this is the opportunity to take away those invaluable tips for success at home.
Close: Have a chat with fellow course attendees and members of the River Cottage team, before jumping on the tractor to take you back up the hill. Not forgetting your very own pate that you made earlier in the day.
This is a guide to the activities that will make up your course at River Cottage. This is by no means set in stone and will depend on the season, and availability, as well as the group’s interest.

Location: This course is run from River Cottage HQ on the Dorset/Devon borders. Full address details of HQ will be provided once you have booked.
Wine/drink: We are a licensed venue. We have a wide selection of the finest organic wines.

Age: We would advise that this course is only really suitable for 12yrs of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests.
