Join nutritionist Naomi Devlin for a day of gluten free cookery at the River Cottage Cookery School.

The day will be a combination of hands-on cookery and demonstration based recipes, giving you the support and tuition necessary to follow a gluten free diet. You will come away inspired and with a good understanding of gluten free flours and healthy gluten free options as well as alternatives for dairy and other food intolerances.

Your day at River Cottage


Arrive: Tractor ride down to the farm

Welcome: Meet your host and nutritionist Naomi Devlin, see for yourself the famous River Cottage farmhouse and kitchen garden. Enjoy a morning tea or coffee and tasty River Cottage treats (gluten free of course!)

Practical session one: Sourdough – prepare your very own sourdough using wholegrain gluten free flours, you will come back to this throughout the day as you are guided through the various stages.

Practical session two:  Cookies – learn how to make the perfect chewy cookie that can be stored in the freezer, sliced and baked on demand in less time than it takes to go to the shops. 

Practical session three: Pastry – Learn the secrets behind gluten free pastry and then make a batch to chill later for your pasties.

Practical session four: Sourdough - make up your loaf from the starter sponge that has been bubbling away all morning.

Lunch: At River Cottage food is very much the focus and your sumptuous two course lunch of local seasonal fare prepared by the River Cottage team will be among the highlights of the day.

Nutrition and being gluten free: Throughout the day Naomi will talk about the different varieties of gluten free flours, the grains and how to prepare them to ensure maximum nutrition. There will be plenty of opportunities for Naomi to answer individual questions as the day progresses.

Practical session five: Muffins - make delicious seasonal muffins, which could include ginger and orange, carrot, raspberry, cherry, blackberry or pear, depending on the season.

Practical session six: Pasties – impossible to come to Devon and not make pasties! Fillings will be seasonal and local.  Make a couple and take the rest of the pastry with you to experiment at home.

Session seven: Blinis – Naomi will demonstrate sourdough buckwheat blinis and you will have the opportunity to try flipping these yourself, followed by lots of tasting!

By now you will be bursting with ideas and no doubt have a few questions to ask Naomi, this is the opportunity to take away those invaluable tips for success when you get back to the kitchen.

Close: Get your books signed, have a chat with fellow course attendees and members of the River Cottage team, before jumping on the tractor to take you back up the hill.

This is a guide to the activities that will make up your course at River Cottage. This is by no means set in stone and will depend on the season as well as the groups interest. 

PLEASE NOTE:  the ingredients that Naomi uses during the day include: almond and chestnut flour, rice flour, buckwheat and tapioca.  This course is not suitable for those with almond and chestnut allergies and cannot be adapted for those with a rice-free or grain-free diet.  Please let us know in advance if you have a dairy-free intolerance so that we can cater for this.

Location: This course is run from River Cottage HQ on the Dorset/Devon borders. Full address details of HQ will be provided once you have booked.

: We would advise that this course is only really suitable for 12yrs of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests. 

Time: 10.00am - 5.00pm

On occasion cookery schools will use equipment that includes induction hobs. It is recommended that people with pace makers should not work on these units. Excellent Day

Your review This is my second course at River Cottage HQ. I like the lay out of the new cook school "classroom". More room and stations for 4 people seemed to work well and aids socialising. My previous attempts at gluten free pastry had been hopeless. I liked Naomi's style. She was excellent at explaining the grouping of different flours and what each had to offer to a recipe. The teff flour sourdough we made was so flavoursome, as was the pastry for pasties. In fact, everything we made tasted good. She was excellent in handling questions and the different dietary intolerances of the group,and adapting recipes accordingly. She made us all feel at ease. An excellent teacher and excellent course. I apologise for rushing off without saying 'Thank you" to Naomi but I hope she reads the reviews. The only downer was the extractor fans made it a bit difficult to hear at times.

Disappointing Aspects

Positives: The course tutor- Naomi clearly knew a lot about what she was teaching and was very happy to answer any of our questions. Lunch: A delicious 2 course meal in the beautiful outdoor setting. Recipes: The recipes we made during the day included sweet and savoury dishes and we were given a pack at the beginning of the day with the 6 recipes and some notes in to take back with us. Negatives: Timings- The day seemed very rushed and didn’t seem to flow very well. It felt like we either needed an extra hour, or to not have to wash and dry up all of our equipment throughout the day. Equipment- The course didn’t seem particularly well organised as quite a lot of ingredients and equipment weren’t to hand when we or Naomi needed them. Some of the basic equipment was also supposed to be shared between 2 people which resulted in more wasted time waiting for the other person to do theirs first. Ovens- I’ve given this its own section because not only did a couple of the ovens stop working (with the others working much better on one side than the other), but one of the oven doors actually broke on a lady attending the course, burning her arm. Overall: The course was good and we did learn a lot, but there were lots of small things that were disappointing and we would expect to be a lot better given the price of the course.

This is a great course. Even if you’ve only a passing interest in wheat intolerance, it’s a must. Naomi is a wonderful knowledgeable teacher who really knows her stuff! She is an absolute pleasure to be with. I had no idea I was going to come home with so much “loot”. Bread, brownies, savoury tart, and muffins. All of which even if you don’t have a problem with wheat you’d be happy to scoff! Everyone had a super day and a fantastic lunch. Thank you River Cottage!

What a fantastic day. The course, staff, food was all excellent. Naomi the tutor was brilliant. Her knowledge was invaluable, especially the nutrition information that will help me get the best from GF cooking. Can't thank you all enough. Can't wait to find another course to do.

I would thoroughly recommend this course…having recently been diagnosed with coeliac disease, it would have saved a lot of angst, if only I had booked to go on it sooner! It was a fantastic day from beginning to end, informative and fun with a lovely bunch of people and an amazing lunch laid on by the River Cottage chefs. The tutor's style, while extremely knowledgeable, is laid back with a lovely sense of humour. We left with the most delicious assortment of gluten free breads, buns and savouries, all of which were a huge hit with my (non allergy) family! There was a great deal packed into the day, really hands-on and made all the more enjoyable by the River Cottage staff working tirelessly in the background. This course has increased my confidence no end and the kitchen feels like a different place now! Thank you to Naomi and all the team at River Cottage.
