Join nutritionist Naomi Devlin for a day of gluten free cookery at the River Cottage Cookery School.
The day will be a combination of hands-on cookery and demonstration based recipes, giving you the support and tuition necessary to follow a gluten free diet. You will come away inspired and with a good understanding of gluten free flours and healthy gluten free options as well as alternatives for dairy and other food intolerances.

Arrive: Tractor ride down to the farm
Welcome: Meet your hosts Steve Lamb and nutritionist Naomi Devlin, see for yourself the famous River Cottage farmhouse and kitchen garden. Enjoy a morning tea or coffee and tasty River Cottage treats (gluten free of course!)
Practical session one: Sourdough – prepare your very own sourdough using chestnut and buckwheat, you will come back to this throughout the day as you are guided through the various stages.
Practical session two: Brownies – Gluten free coconut brownies are next on the menu, Naomi will give you step by step instructions to creating these delicious treats before you get stuck in yourself..
Session three: Nutrition & being gluten free. In this session you will look at different varieties of gluten free flours, talk about grains and how to prepare them to ensure maximum nutrition.
Lunch: At River Cottage food is very much the focus and your two sumptuous two course lunch of local seasonal fare prepared by the River Cottage team will be among the highlights of the day.
Practical session four: Pastry – Learn the secrets behind gluten free pastry as you prepare a delicious Pissaladiere Tart,
Practical session five: Muffins – delicious breakfast muffins are a real treat, Naomi will run you through the process, and help you tailor the muffins to your taste by adding your favourite ingredients such as; choc chunks, dates or dried apricots.
Session six: in this demonstration led session you will learn how to create Buckwheat Pancakes and Pea Pikelets, followed by lots of tasting.
Q&A: By now you will be bursting with ideas and no doubt have a few questions to ask Naomi, this is the opportunity to take away those invaluable tips for success when you get back to the kitchen.
Close: Get your books signed, have a chat with fellow course attendees and members of the River Cottage team, before jumping on the tractor to take you back up the hill.
This is a guide to the activities that will make up your course at River Cottage. This is by no means set in stone and will depend on the season as well as the groups interest.
PLEASE NOTE: the ingredients that Naomi uses during the day include: almond and chestnut flour, rice flour, buckwheat and tapioca. This course is not suitable for those with almond and chestnut allergies. Please let us know in advance if you have a dairy-free intolerance so that we can cater for this.

Age: We would advise that this course is only really suitable for 12yrs of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests.
