Whether you keep your own sheep (or plan to) or are interested in buying whole animals direct from a producer, this course will give you all the know-how you need to deal with the carcass, as well as some delicious recipes that make the very best of the meat. Keep me informed >

Starting the day with two whole carcasses, one of a locally reared lamb, and one of either Hogget (a one-to-two year old lamb) or mutton, The River Cottage team will demonstrate and explain the principles and process of butchering the carcass. They will go on to show how to prepare delicious and manageable joints, both for the freezer and for immediate cooking, plus meat for lamb burgers and spicy mergues sausages. Over the course of the day, you will be taught how to turn the offal in to delicious recipes, as well as learning a recipe for slow-cooked lamb or mutton casserole.

Half way through the day, guests will sit down to a special lamb lunch prepared by the River Cottage Chefs. You will be given a copy of all the recipes to try at home.

Maximum no of guests: 25

This event is demonstration based and practical participation is not required, although volunteers are encouraged to take part in the demonstrations at some point during the day.

Seasonality: September to June

Location: This course is run from River Cottage H.Q on the Dorset/Devon border.

Wine/drink: We are a licensed venue. We also have a Bring Your Own policy and we do not charge corkage. We have a wide selection of the finest organic wines. We will be serving organic cordial and iced water from our own well.

Age: We would advise that this course is only really suitable for 12yrs of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines for the safety, comfort and enjoyment of all our guests.

Time: 10.00am to 5.00pm

“Meat should be something to be celebrated and savoured, and the best way to do that is to treat the animals with respect. That means, of course, looking after it properly when it’s alive, but also doing it justice in the kitchen, making the most of every last scrap. If the animal has died for us, the least we can do is make the absolute most of it. And so the day continues. Sliced liver on sourdough by way of a canapé leads to lunch of breast of mutton stuffed with apricots, thyme, garlic and shallots. Afterwards, there is merguez made with diced shoulder, citrus-braised lamb shanks, shish kebabs from chump end and Lancashire hotpot with best end, neck and chops. It’s an amazing day, and one I’ll get the brigade from Claridge’s down to witness soon. You can’t come away without a renewed respect for mutton” - Gordon Ramsay
