How to make a meat smoker using a cider barrel

Ive just seen a re-run of a River Cottage Christmas episode during which Hugh was shown how to build his own smoker for his bacon, ham, sausages etc, using a cider barrel. Does anyone have step-by-step instructions on how this is done? and can a wine barrel sustitute for a cider barrel?

Hi, I am presently following Hugh's recipe for salting my own bacon. I am using a good piece of free-range pork belly, but I just want to know should I have taken the skin off the meat before the salting process?
