Coconut, Lime and Courgette Cakes

These light summery cakes are packed full of zesty lime and cooling coconut flavours… Made with spelt flour, maple syrup and courgettes

Apricot Sweets

These are really easy to make, they are healthy and they look pretty too. All the sweetness comes from the dried apricots but if you want you can add a couple of tablespoons of caster sugar to the mixture to make them that little bit sweeter. I also made a batch using organic apricots too – they are not quite so pretty but taste just as yummy.

Cornish Fairings

These biscuits are full of spices and ginger. They are a kind of gingerbread and not dissimilar to a ginger nut (except with a softer texture). These were traditionally sold at Cornish Country Fairs (hence the name).

These are actually quite a healthy treat (the main ingredients are dates and walnuts). They are also really quick and easy to make.

Pumpkin, walnuts and nutmeg are combined to create this moist and slightly sweet bread.

Carrot Cake with Cashew Nut Icing

This is a really light and fluffy carrot cake. It uses sunflower oil instead of butter and the carrot is really finely grated so that the texture is nice and springy. The cashew nut icing is a tasty and healthy alternative to butter icing.
