A delicious warming seasonal recipe with artichoke crisps. Fresh and seasonal ingredients. At River Cottage we love supporting local food producers. Jerusalem artichokes: These look a little like root ginger, they are in season now and you should find them in all good supermarkets or farmers' markets. Jerusalem artichokes are sweet and almost garlicky and mushroomy and gorgeous. Although called artichokes they're actually tubers – like rough and ready potatoes. Barley is a fantastic grain for winter soups, stews and risottos. It is wonderfully versatile cereal grain with a rich nutlike flavour and a chewy consistency. Its appearance resembles wheat berries, although it is slightly lighter in colour. It is healthy high fibre high-protein whole grain boasting numerous health benefits. Barley is also used in booze: barley is used as an ingredient in beer and other alcoholic beverages.
