Cauliflower Soup and Onion Pakoras

Cauliflower is a great vegetable and in season now. It is often forgotten about and certainly not used to its full potential, it can be sweet and creamy or roasted it takes on a nutty taste. Blitz it raw and use as rice or boiled it makes great soups and purees. It comes in several varieties and colours - purple, orange and the spiky romanesco.
