I am making this year's first batch of passata. Unfortunatly I am temporarily without my mouli, and do not have a nylon seive.
I just want to check that it would be ok to use my potato ricer?

I don't want to use my metal seive, as the metal will react with the acid. Would it do the same to my ricer?

If not, does anyone have any other ideas what i could use in place of the mouli?

The toms are currently roasting in the oven, and I am unable to buy a new mouli in time!!!!!!

This dish is so nice to have on a hot summer's day! The chilled soup is very fresh and light, packed full of sweet strawbbery. The Basil sorbet is lovely and cooling, with a slight punch from the peppery heat of the basil. The crystallised Basil leaves are great for the presentation of the dish, yet also wonderful to eat! It celebrates the strawberry and basil as the main stars!

elderflower champagne:

after waiting since last summer, i have finally started the elderflower champagne. trouble is, after reading the thru the recipe on the main site again, i noticed that there seemed to be a lot of sugar, and not much water...

i have done it as 1kg of sugar, to 6 L of water.. i'm hoping to get around 6-8 bottles from this.

has anyone who has made this recipe before got any tips? do you think the above ratio is right?

also, i have covered with a muslin (in a sterile bucket) and have put in the basement. i only did it this morning, but it is already smelling lovely! i plan to put it into glass swing top bottles, but after reading the forum on this issue, i am quite reluctant..

i read horror stories about the bottles exploding and glass going everywhere!!! also about the tops having to be released every day or more to let some of the gas out?!

please bear with me, sorry for all the questions, but i am a novice at making hedgerow brews etc!

any advice or help from experianced brewers of elderflower greatly appreciated!

hi, i have been growing some baby watercress in my patch. we have been picking it for the past week, and it really is very tasty! i have done some research, but i cannot find out if it is a 'crop and come again' plant. does any one know?

i usually keep all of my seed packets, but cannot fond this one! typical!

i pop into this site every now and then, and think it is very useful, mainly this question section.

sadly there are a few people on here who seem to be getting quite rude and sarcastic towards novice users.

i see this site, and this section, and an invaluable source, where you can get good advice and return some, if you can, to like minded people.

if a first time user was to ask a question, and get the afore mentioned response, then they will probably not ask another in the future or worse, will not post an answer which may be able to help someone.

this, i feel, could ruin what this whole place is about, being a 'community' of similar people, helping each other through the river cottage way of life!

i have brought this to admin's attention, and hopefully these posters will stop, and newcomers can ask away!

sorry to rant, but after reading those answers , i got rather annoyed!

we have made raised beds and would like to get some fertilizer, but on the cheap...
i would imagine it would be fairly marked up on price at garden centres, so would like to buy directm if poss. would calling stables and liverys etc be a good way of doing this?

any other tips?

we have kindly been given a lovely rhubarb plant for my partner's birthday. i have looked around and rung a couple of reclamation yards etc, to try and find an old chimney pot. the average price seems to be between £50-80. i think we would pay max £20!
my question is, what else would be suitable to help the rhubarb 'force' to grow towards the light? i have heard you can use dustbins etc, but i would like something visually appealing..! any ideas or tips would be gratefully receieved,

this might be a bit of a ong shot, as i cannot really find anything on google, but i'm hoping one of you might be able to help..
i am looking to get company bagdes made, but i want them to be fair trdae and environmentally friendly. the only thing i can think of is a fairtrade cloth badge, with a pin or something. or it could be sewn on. i don't think a normal badge could be made with eco products. does anyone have any ideas/suggestions/companies that might help?
our company want to be ethical and eco friendly, and having a standard badge would not fit in with our ethos.. (do river cottage have badges?)
