I have just replaced my aged Panasonic breadmaker. My new machine calls for a packet of yeast for one recipe. As i live in Portugal pack sizes may no be the same as the UK pack size. Could someone tell me how to work out weight of fresh yeast ie: tsp.

I use a bread maker and i have had a number of loaves that have not risen when baked. I buy my flour from Makro in 5 kilo bags and living in a tiny village in central Portugal i buy enough to do me a while. Normally it's not a problem and last time i got 30 kilo and stored it in my bedroom. At this time of year the overnight temperature is often down to as low as 12c. The bedroon doesn't get much better during the day and it's difficult to keep the temperature at a constant temperature.
I have been told that the temperature had done something to the Gluten in the flour. I got a kilo of flour from a local supermarket and that worked perfect so it looks like my flour may have a problem.
My question is can something be done so i don't have to get rid of about 20 kilo of good bread flour.
