Broccoli is still in season and the (easter) eggs in the flan make this a very seasonal dish - so I'd like this to be entered into the March competition. This is a great way to use up some otherwise forgotten greens. I thought my broccoli had given all it could the other week and was ready to pull her up but she is still producing some very small buds and along side the buds are some very tasty fresh leaves. You can use other greens in place of the broccoli such as spring greens, kale or even beetroot tops. Vegetarians can omit the bacon.
I came up with this idea when I had some leftovers from a Taco Meal and a giant ball courgette. However it was so nice that I have made it since from fresh. Where possible all ingredients are home grown or from my veg box. I grow the yellow courgettes every year, some people say they are lacking in taste compared to the green ones but I love them all. The best thing about the yellow ones though is you can see when one has grown; they don't get lost in a sea of green leaves! Just a question about the posts here do I have to tag all the relevant ingredients in one recipe for the seeds of change comp? I could make this with Borlotti Beans I suppose, but I have not grown any so it's too late for this year! This recipe was invented before I saw that advert.
