A bread making course to take your skills to the next level. Spend the day working with enriched doughs at the River Cottage Cookery School.
The perfect next step for passionate home bakers, this course will teach you how to create yeasted breads and pastries. Under expert guidance, you’ll master croissants and brioche, doughnuts and Chelsea buns.
Set against the stunning backdrop of River Cottage HQ, you’ll enjoy a two-course lunch and have the chance to explore Park Farm.
The day is perfect for people who have already attended our Bread Making course, or for anyone looking to enrich their bread baking knowledge.

Arrive at River Cottage
You’ll be met at the top of the hill at 9.30 and transported to River Cottage HQ by tractor and trailer.
Make yourself at home
You will meet your host and start the day with tea, coffee and treats fresh from the kitchen.
Practical session one
We’ll start our baking journey looking at ingredients for enriching your dough and get our hands straight into making brioche.
Demo session one
We’ll show you all the secrets to starting your croissant dough.
Practical session two
Let the lamination commence! You’ll learn the process folding and rolling the butter into your croissant dough and keeping those perfect layers.
Practical session three
You’ll prepare a Chelsea bun dough that we will come back to later in the day.
Practical session four
All about doughnuts – we’ll start by bringing this lovely sweet dough together to be fried and filled later on.
Food is always the focus at River Cottage, and a two-course lunch of local, seasonal fare will be one of the highlights of your day.
Practical session five
Rolling out croissants, pain au chocolat and letting them prove.
After all your hard work, there will be plenty of warm sweet treats to tuck into and you’ll be able sample your own freshly baked croissants with homemade River Cottage jam.
By now you will be probably be bursting with questions, so this will be your opportunity to take away some expert tips for bread success at home.
There will be time to chat to your fellow scholars and the River Cottage team, before being whisked back up the hill by our tractor and trailer, brioche and croissants in hand.
Please note: This is a guide to the activities that will make up your course at River Cottage. This is by no means set in stone and will depend on seasonal availability.
On occasion cookery schools will use equipment that includes induction hobs. It is recommended that people with pace makers should not work on these units. If you are concerned or would like to check whether or not induction hobs will be used on the course you are interested in, please call us on 01297 630302.
This course is run from River Cottage HQ on the Dorset/Devon borders. Full address details of HQ will be provided once you have booked.

We would advise that this course is only really suitable for 12 years of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests.
Sorry, we’re afraid this course is not suitable for those with coeliac disease or wheat intolerances. However we do run Gluten Free Cookery courses.
