One Day Cookery Course
Master new kitchen skills in the most idyllic of settings, with a day of interactive learning on the River Cottage One Day Cookery Course.
What a difference a day makes! Our One Day Cookery Course is a fun and informal introduction to the culinary world, with techniques and ideas that will inspire you to get cooking at home.
During the day you will create a seasonal starter, main course and pudding, and eat them too, of course. You’ll make and bake your own loaf of bread, craft perfect desserts, get to grips with fish and learn the principles of nose-to-tail eating – all amid the stunning scenery of River Cottage HQ.

Arrive at River Cottage
You’ll be met at the top of the hill at 9.30 and transported to River Cottage HQ by tractor and trailer.
Start the day with tea or coffee and treats fresh from the kitchen.
Practical session one: Bread
First you’ll learn the principles of bread and make your very own farmhouse dough, which you’ll return to throughout the day as you knead, shape and bake your loaves.
Practical session two: Pudding
You’ll find out the secret to great desserts and get your pudding under way.
Practical session three: Meat
We’ll introduce you to the River Cottage nose-to-tail approach, and show you how to prepare your meaty main course.
Practical session four: Veg
Next you will learn to make a quick and tasty vegetarian snack, such as roast carrot hummus and flatbread, to keep you fuelled!
Demo session: Fish
Then you’ll pick up the skills needed for filleting fish, as your chef demonstrates a quick and easy fish dish from scratch.
Practical session five: Pulling it all together
You'll add the final touches to your menu, preparing sauces and accompaniments for your meal.
After all your hard work, your group will finish the day by sitting down and tucking into your meal of local, seasonal fare.
There will be time to chat to your fellow cookery course scholars and the River Cottage team, before jumping on the tractor to take you back up the hill.
Please note: This is a guide to the activities that will make up your course at River Cottage. This is by no means set in stone and will depend on seasonal availability.
On occasion cookery schools will use equipment that includes induction hobs. It is recommended that people with pace makers should not work on these units. If you are concerned or would like to check whether or not induction hobs will be used on the course you are interested in, please call us on 01297 630302.
This course is run from River Cottage HQ on the Dorset/Devon borders. Full address details of HQ will be provided once you have booked.

We would advise that this course is only really suitable for 12 years of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests.
