Our hedgelaying course is a great introduction to the rural craft of hedgelaying in the Devon/Dorset style at River Cottage.
Have you ever wanted a go at laying a hedge? Whether it’s your garden hedge, an unruly hedge on your smallholding, or a skill you would just like to learn, this course is an ideal place to start. Hedgelaying is a traditional rural skill, creating a beautiful stock-proof field boundary and provides a valuable habitat for wildlife.
The Hedgelaying course is led by Roly Boughton, our Assistant Farm Manager at Park Farm, who has been laying hedges for many years, and likes nothing more than a winter’s day working on a hedge to create a thing of beauty. He will be showing you how to lay a hedge in the local Devon/Dorset style, which is a low tightly woven method normally found on top of a bank.
This course is very much a practical hands-on course and it’s advisable you bring suitable outdoor clothing, stout boots and be prepared to get the odd scratch from a bramble. Gloves and tools will be provided along with a hearty seasonal lunch in the River Cottage farmhouse.

You’ll be met at the top of the hill and transported to River Cottage HQ by tractor and trailer.
Make yourself at home
You will meet your host, Roly, and enjoy a morning tea or coffee and tasty River Cottage treats.
To kick things off, Roly will cover the essentials of hedgelaying, its history, its purpose and the reason for the various styles.
Out on the farm, you'll start to clean out bramble and brash and prepare the hedge before laying. Roly will give a demonstration on pleaching, binders and hedgelaying technique.
Food is always the focus at River Cottage, and you’ll tuck into a delicious hearty lunch, prepared by our chefs using produce from the farm.
Return to your hedgelaying, where you will be working in pairs to lay the hedge. Then stand back and survey the beauty of your work!
Back to the farmhouse for a well-earned hot drink and the chance for a quick re-cap.
There will be time to chat to your fellow scholars and the River Cottage team, before being whisked back up the hill by our tractor and trailer.

On occasion cookery schools will use equipment that includes induction hobs. It is recommended that people with pace makers should not work on these units.
