Curing and Smoking at Borough Market (9.30am-1.30pm)

Meat lovers of London unite for this half-day demo led workshop with Steve Lamb, who will introduce you to the world of artisan curing and smoking.

Curing and smoking are one of the oldest traditional food methods that are creating a modern day buzz. If you want the pleasure of creating your own charcuterie, this half-day course will give you the confidence and know-how to get started.

You will learn key techniques for making a range of classic products such as bacon, bresaola, salami and prosciutto as well hot smoking fish with plenty to taste and try along the way.

The course will take place in Borough Market’s Cookhouse venue, an open plan kitchen and dining space with a bird’s eye view of the season’s finest produce in the market below.
