A delicious introduction to cooking the River Cottage way, covering fish, meat, vegetables, bread and dessert.
On this one-day cookery course you will get to grips with a wide range of cooking techniques and ingredients, including bread, fish, meat and veg. Designed as the perfect introduction to the River Cottage seasonal approach, this course will provide you with recipes, techniques and ideas that will continue to inspire your cooking at home.
If you are looking to gain more confidence in the kitchen or add to your existing skills with fresh ideas and recipes, this course is for you. With every recipe, your chef tutor will demonstrate the skills and techniques needed and then it is your turn to recreate the dish. Your tutor will be on hand at all times with guidance and encouragement and with just ten people per group there will be plenty of time for questions and individual support.
Many of the ingredients you will sample throughout the day will come from the River Cottage Kitchen Garden or one of our neighbouring farms. Provenance is something we care passionately about at River Cottage and your tutor will explain where your ingredients came from and we hope you will learn a little about why we believe eating seasonally and sustainably is not only important but also tastes better.
By the end of the day, you will have baked a loaf of bread, and cooked up a veggie, fish and meat dish plus a pudding! You will get chance to critique your own creations when you tuck into some of them at lunch time. You will leave amazed at how much you've learned in a day and what a difference it can make to your cooking.

Make yourself at home
You will meet your host, and begin the day with tea, coffee and treats fresh from the kitchen.

Session One
Get stuck in straight away, learning the principles of bread making and tackling your very own loaf, which you will return to throughout the day as you knead, shape and bake your loaves.

Session Two
We are lucky enough to grow the a variety of incredible vegetables here at the farm. Find out more about our passion for veg as you're guided through your first seasonal dish of the day.

Session Three
Next we'll talk about sustainable fish and you'll make a quick and easy dish with the catch of the day from our local supplier.

Lunch
Time to take a break and tuck in to the fabulous fish and veg dishes you have created in the morning.

Session Four
After lunch you'll learn more about ethical sourcing and lesser known cuts of meat and create a sumptuous plate of food under the expert guidance of your chef tutor.

Session Five
You'll round off the day by creating something sweet, learning the secret to great desserts and how to adapt to make seasonal choices.

Departure
There will be time to chat to your fellow scholars and the River Cottage team, before heading back up the hill for 5pm.

On occasion cookery schools will use equipment that includes induction hobs. It is recommended that people with pace makers should not work on these units. With many of our courses there are often treats and leftovers to take away with you. In our quest to be more sustainable we are encouraging guests to bring their own containers and bags to transport their produce home. Details of what is required for each course will be included in booking emails.
