Pizza and Pasta
Immerse yourself in Italian cuisine, with a day of fresh, handmade pasta and pizza at the River Cottage Cookery School.
Our Pizza and Pasta course is a celebration of Italy’s most beloved carbohydrates. This Italian cookery course is a brilliant day of learning, exploring and eating, set against the quintessentially British backdrop of River Cottage HQ.
Using homegrown and locally-sourced ingredients, you’ll learn how to make fresh pasta, wood-fired pizza and delicious sauces from scratch. You’ll start with great pizza dough and a selection of organic toppings to make your lunch, then move on to craft fresh pappardelle and ravioli, gorgeous sauces and pesto. And of course, you’ll finish the day with a hard-earned feast.

Arrive at River Cottage
You’ll be met at the top of the hill at 9.30am and transported to River Cottage HQ by tractor and trailer (approx. a 5 minute journey).
Make yourself at home
You will meet your hosts and start the day with tea, coffee and treats fresh from the kitchen.
Practical session one
First you’ll learn how to make pasta dough from scratch, which will rest until you need it later.
Practical session two
You will start the pizza process by making the dough, using stoneground organic flour.
Practical session three
Next you’ll prepare your choice of organic ingredients from River Cottage and our local growers, ready to top your pizza.
Practical session four
Time to roll out your dough, then make your pizza. Then cook it in one of our wood-fired ovens for your lunch.
Practical session five
Once you’ve eaten your handiwork, it’ll be time to roll out some of your pasta into pappardelle ribbons and hang it up to dry.
Practical session six
You’ll roll out more pasta to create ravioli, stuffed with a selection of different fillings.
Practical session seven
You’ll take your fresh pappardelle and turn it into a traditional pasta carbonara for your starter.
Practical session eight
Then it will be time to poach your ravioli, and finish off the dish with homemade pesto.
After all your hard work, you’ll sit down to enjoy your handmade Italian feast.
There will be time to chat to your fellow scholars and the River Cottage team, before being whisked back up the hill by our tractor and trailer at 5pm.
Please note: This is a guide to the activities that will make up your course at River Cottage. This is by no means set in stone and will depend on seasonal availability.
On occasion cookery schools will use equipment that includes induction hobs. It is recommended that people with pace makers should not work on these units. If you are concerned or would like to check whether or not induction hobs will be used on the course you are interested in, please call us on 01297 630302.
This course is run from River Cottage HQ on the Dorset/Devon borders. Full address details of HQ will be provided once you have booked.
We are a licensed venue. We have a wide selection of the finest organic wines available to purchase.
We would advise that this course is only really suitable for 12 years of age and upwards. Under 16s must be accompanied by a paying adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests.
Sorry, we’re afraid this course is not suitable for those who follow a gluten free diet, however, we do run a Gluten Free Italian course which would be suitable. Please get in touch if you need further details.
With many of our courses there are often treats and leftovers to take away with you. In our quest to be more sustainable we are encouraging guests to bring their own containers and bags to transport their produce home. Details of what is required for each course will be included in booking emails.
