very easy, suprisingly impressive starter. Use the best tomatoes you can find- preferably home grown!

Servings
  • 4 as starter or side dish.
Ingredients
  • 2 spring onions
  • 1fresh ripe beefsteak tomato
  • 6 ripe cherry tomatoes
  • 1Fresh ripe plum tomato
  • Handful of basil
  • 8 slices fresh crusty bread
  • 2 large cloves garlic
  • drizzle olive oil
  • salt & pepper to taste

Directions
Chop tomatoes, spring onion and basil and mix together with a generous pinch of ground black pepper. peel garlic, cut in half and rub the garlic on the slices of bread, drizzle with the olive oil and place under a hot grill until lightly toasted both sides. Place a generous amount of the tomato mixture on the top and serve.
