Great for putting in a lunchbox or as a tasty snack that kids love. It also gets some hidden veg in tiny tums! You can make them in a batch and then freeze some for later use!

Ingredients
  • 300g/12ozs wholemeal flour (or mix half/half plain white and wholemeal)
  • 1 tbsp baking powder
  • 1 tsp bicarb soda
  • 175ml/6flozs milk
  • 2 eggs
  • 3 tbsps vegetable oil
  • 1 med/lge carrot, coarsely grated
  • 100g/4ozs Edam cheese, grated
  • 120g/5ozs courgette, grated
Directions

Pre-heat the oven to 200� C��������������������������������������

1.�� Mix dry ingredients in a large bowl

2.�� In a separate bowl, beat the eggs into the milk with oil and add the grated cheese,carrot and courgette

3.�� Add at once to dry ingredients and combine until just mixed.� DON’T� OVER� MIX!!

4.�� Spoon into prepared muffin tin and bake for approx 20-25 minutes
