not an exact original. i used to do something very much like this but the veg bits were bigger and grilled and didn't use the tomatoes so i've imagined this dish.

Ingredients

2 courgettes
1 aubergine
10 cherry tomatoes
4 sprigs mint
2 tblspns olive oil
1 tblspn red wine vinegar

Courgette

Directions

mix olive oil, vinegar and mint and throw into hot wok dice the aubergines and throw into wok half the tomatoes and throw into wok shave the cougettes and you're guessed it throw into wok remove when veg is tender and not broken down. Serve with hot with good bettered bread
