Fresh courgettes from the garden are cooked with fresh tomatoes, onions and herbs with a final touch of Lancashire cheese

Ingredients
  • 4 smallish courgettes sliced very thinly
  • 1 medium onion chopped very finely
  • 2 cloves of garlic
  • half a pound of tomatoes, roughly chopped
  • fresh or dries basil and oregano
  • piece of Lancashire cheese, size depending on taste

Directions
Gently cook the finely chopped garlic and onion in a wide frying pan in olive oil till soft but not too brown Add the sliced courgettes, with a little more oil if too dry. Cook over a medium heat turning the courgettes often, try to get them browned but not dried out. Add tomatoes and a srinkling of herbs and heat through finally sprinkle Lancashire cheese on top, let it just melt but not get too soggy, can brown it under the grill serve straight from the pan very good with a green salad and garlic bread
