I recently made up this recipe of courgettes stuffed with a pork & parmesan. It is based on a dish my Italian Aunt cooked for me years ago.

Ingredients
  • 4 x Courgettes
  • 400g Pork Mince
  • 1 x stale bread bun grated to make breadcrumbs
  • Small handful of parsley finely chopped
  • 1 x clove of garlic minced
  • 1tsp of grated nutmeg
  • Juice of 1 lemon & 1tsp of grated rind
  • 60g parmesan cheese grated
  • Salt & Pepper

Directions
1. Top & Tail the courgettes and then slice in half lengthways. 2. Spoon out a small amount of courgette from each slice and add to a bowl. 3. Place the Courgettes on a baking tray. 4. Add all other ingredients to the bowl, keeping back a small amount of breadcrumbs and parmesan, and mix well. 5. Get a small handful of the stuffing mix and roll in to a sausage shape. 6. Place this into the space spooned out of the courgette. 7. Repeat for the remaining courgettes and then sprinkle a little parmesan cheese and breadcrumbs over each one. 8. Finally drizzle a little olive oil over them and place in an oven at 200C for around 40 minutes. Note: These are also nice with a piece of parma ham draped over each one either before or after cooking. Also nice served with a tomato based pasta sauce.
