Hugh's recognised a simple pattern that underpins so many well-loved dishes – that they are little more or less than three good things on a plate and in this series, he pursues that idea, experimenting with different flavours and textures.

  • 2 fillets of black bream
  • 6tbsp. Olive oil
  • 2 carrots, peeled and sliced
  • ½ onion, peeled and sliced
  • 1 clove of garlic, peeled and roughly chopped
  • chilli flakes
  • 2 sprigs of thyme
  • 10 Whole all spice berries
  • 1 lemon
  • 6tbsp. white wine vinegar
  • Sea salt and freshly ground black pepper

Drizzle the bream fillets with 2bsp of olive oil, 2tbsp lemon juice and season with salt and pepper. Leave to marinate in the fridge for 20 minutes.

Put the carrots, onion and garlic into a saucepan along with the crushed allspice and a pinch of chilli flakes and cook over a medium heat for 5 minutes until beginning to soften.

Add the vinegar to the pan along with 4tbsp of oil, the thyme, 150-200ml of water, season with salt and pepper. Bring to the boil then simmer for 4-5 minutes.

Pan-fry the bream in a preheated frying pan. Fry skin side down for a couple of minutes or until the skin is crisp. Turn over and cook for a further minute or until just cooked through.

This dish can be served hot or cold but traditionally the fried fish would be placed in a suitable dish with the hot pickle poured on top and left to absorb the pickle flavour. However you can serve the fish straight away with the vinegar mix drizzled over the top.

Gotta say it`s my pleasure n a real honour to have joined Hugh Fearnley Whittingstall and Kasper Gaard in this truly amazing TV show n hopes it`s not the last either.
I was surrounded last night by a full house at The Old Friary to watch the show and to see me kick start it with a win.
I must mention I awoke this morning to loads of messages and a phone call from my mother in London telling me she watched the show n nis proud of me.
