Which Grandma this came from originally is lost in the mists of time but it is a delicious light fruit cake which will keep for at least three weeks. Ideal for unexpected visitors!

Servings
  • 1 very large cake, 2 medium cakes or 1 medium cake and 8 buns
Ingredients
  • 1 lb self raising flour (500g)
  • 1/2 lb sugar (250g)
  • 1 lb mixed dried fruit (500g)
  • 1/4 lb glace cherries (125g)
  • 3 large eggs
  • 1 packet (1/2 lb) butter or block margarine (250g)
  • Milk or water to mix

Directions
Heat the oven to gas mark 3 (160 C, 320 F). Cream butter and sugar. Gradually beat in eggs, adding a little flour if the mixture begins to curdle. Stir in the flour, dried fruit and cherries Add a little milk or water to achieve a soft dropping consistancy. Spoon in to an 8" lined cake tin or two smaller tins or bun tins Bake at gas mark 2 1/2 to 3. The large cake takes about 1 1/2 hours to cook. Test to see if the cake is cooked by interting a clean skewer. If it comes out clean the cake is cooked. Allow to cool in the tin slightly and then turn out on to a wire rack to cool. To store, wrap in greaseproof paper and place in a tin. It also freezes well. (If stored in an air-tight plastic "tin" the cake may sweat and not keep so well).

We really enjoyed this cake :O)
