An easy, zesty marinade for the summer. Hugh: "The River Cottage team recommends using sustainably sourced prawns, for example, organically farmed tropical prawns, or trawled cold water prawns from the North East Atlantic fishery. For more information go to fishonline.org.”

- Two
- 8 large prawns
- tbsp olive oil
- juice and zest of two large limes
- 1 thumb-sized piece of fresh ginger, grated
- 1 large fresh red chilli, seeds removed, very finely chopped
- 1 clove garlic, crushed
- tbsp coriander, finely chopped
Combine all marinade ingredients and mix well. Add the prawns (with shells on) and marinade for at least 20 minutes in the fridge. Barbeque prawns for 2 to 3 minutes each side.
