A delicious, moorish, fresh, crunchy and divine main meal- great as a leftovers meal too.

Ingredients
  • 1 large onion- chopped roughly, 1 red capsicum- diced, 6 bacon rashers-roughly chopped, 4 large tomatoes-roughly chopped, 2 tablespoons of yummy olives, 6 large mushrooms- sliced. 600ml. of white sauce, 500gm. of penne pasta, 1 cup of grated cheddar cheese, paprika.

Directions
Prepare all the above vegetables as stated and add to the bacon, in a bowl. Make the white sauce ( 2 tbl. butter melted, add 2 tbl. pl. flour and cook 1 minute. Gradually add 600 ml. of milk and whisk well over a medium heat till thick. Add half of the cheese and stir well.) Cook the pasta and drain; return to the saucepan and add the sauce and the vegetables. pour into a casserole dish and sprinkle rest of cheese over the top. Sprinkle with the paprika. Bake 20 mins at 180., till heated through. YUM!!!

This is very disappointing and not worth the effort. The failure to fry the vegetables and bacon results in a bland and crude pasta dish without any depth of flavour, relying on the cheese to produce the hit. The twenty minutes cooking time (increased by me to thirty) still does not fully cook the capsicum or onion despite them being diced quite fine.The recipe would be improved with the use of chorizo or other spiced sausage. There is no mention of seasoning in the recipe which is an obvious mistake. All in all this is poor student fare, best avoided, life is too short.
