Onion marmalde is DELICIOUS AND VERSATILE. This is my daughters recipe. It has so many uses. Wonderful companion to any type of sandwich/baguette, Ploughmans Lunches/base for soups/with Baked Ham/With baked Sausages/ and don't forget - add to Soured Cream for a nice "dip"! Onions are presently plentiful. You can use Red, Yellow, or White or....a Mix.

  • 1 450MG JAR
Ingredients
  • (Onions "reduce" quite a lot in cooking - so judge your quantities as you go)
  • 8 Medium Sizes Onions (any colour or mix of colours)
  • About half cup of Balsamic Vinegar
  • l lb sugar (to thicken and taste)

Directions
Peel and slice your onions quite thinly and "soften" in butter in the pan, until very lightly golden (do not overcook) Add Balsamic and allow to saute for about 10 minutes. (Gently) Add sugar and allow to thicken, making sure you do not burn the onions. Decant into HOT STERILIZED JARS, capping with waxed paper etc. Store in Fridge for use, "as and when".
