Onion marmalde is DELICIOUS AND VERSATILE. This is my daughters recipe. It has so many uses. Wonderful companion to any type of sandwich/baguette, Ploughmans Lunches/base for soups/with Baked Ham/With baked Sausages/ and don't forget - add to Soured Cream for a nice "dip"! Onions are presently plentiful. You can use Red, Yellow, or White or....a Mix.

- (Onions "reduce" quite a lot in cooking - so judge your quantities as you go)
- 8 Medium Sizes Onions (any colour or mix of colours)
- About half cup of Balsamic Vinegar
- l lb sugar (to thicken and taste)
