Delicious starter with ovenbaked cod, topped with a saute of bacon, apricot and apple, turned in applesyrup

Ingredients
  • 4 cod loins
  • 1 apple
  • 4 slices bacon - dry
  • 100 gr. sugar
  • 1 dl. apple juice
  • 4 apricots

Directions

Start by cutting the apple in 4 and saving the applecore to make the syrup.

Take the applecore, the sugar and the applejuice and bring it to boil. Reduce it to a slight darkish syrup and strain it.

Slice the apricots, bacon and the applecuts into smaller squares and roast it gently in a casserole as a saute. Add the applesyrup, just before serving.

Put the cod loins in a pan, add salt and pepper for taste and bake them in the oven at 180 celcius for 10 minutes.

Top the cod with the saute upon serving.
