Olde English pickle, perfect with sliced hams and a good strong cheddar. In short, illuminous yellow loveliness!

Prep time
  • 15 min plus 24 hrs to soak veges
Cook Time
  • 20-30 mins
Ingredients
  • 11oz salt
  • Enough water to cover veges in a bowl
  • 2lbs each of courgettes, onions(baby shallots left whole or chopped large onions)and cauliflower
  • 8oz Sugar (or to taste)
  • 3tbsp Mustard ( can be powder or which ever you like)
  • 1.4 ltrs Vinegar ( Malt, distilled,white wine or cider)
  • 4tbsp Flour
  • 2tbsp Turmeric
Directions
Dissolve salt in the water. Chop veges into small pieces, no smaller than about 1cm, and put into bowl with veges. Leave to soak for 24 hrs. Mix sugar with mustard and add to 1 ltr of vinegar in a large pan. Drain veges and add to pan. Simmer for 10-20 mins, depending on how crunchy you want your veg. Blend flour and turmeric with a little of remaining vinegar to make a paste and then add all remaining vinegar. Add this to the pan of veges and boil to thicken stiring constantly until bright yellow and shiny! Pour into prepared sterilised jars. Label and date jars and hide them in the cupboard where no-one can steal them!! Chillis can also be added to give it an extra kick. Add two large fat red chillis finely chopped to the flour and turmeric mixture and follow as before.
