Prawns Aguachile
Prawns Aguachile

This is a mexican recipes much loved by my husband. I grew green chillis on the window ledge for the first time this year. They were small but nice and hot, just what is needed for this recipe. The prawns are 'cooked' by the lemon juice.

Cook Time
  • 10 mins
  • 4 as a starter or snack
  • 250 g of Raw Prawns
  • 3 HOT green chillies - finely chopped
  • coriander - small handful, finely chopped
  • 1/2 small red onion - very thinly sliced
  • 4 lemon/limes - juice
  • To serve:
  • crusty bread, crackers, tortilla chips or tostadas
  • avocado - thinly sliced
Deshell the prawns and open them butterfly style (almost cut in half lengthways). Finely chop the green chillies. Cut the onion into very thin slices. Add all the ingredients, mix, and then add the juice of all the limes/lemons. Let it rest of a 5-10 minutes. This is traditionally served on top of a tostada (fried tortilla) with avocado like in the picture. You can use crusty bread, tortilla chips or crackers as tostadas are not very common in the UK.
