Provencal courgette gratin

a delicious summery accompaniement to grilled meat and fish

Ingredients

6 medium courgettes, 4 cloves of garlic, 1 tbspn good olive oil (or butter) and a 4 tbspns brown breadcrumbs (white would do!), about 100 ml creme fraiche

Directions

Chop courgettes into slices, roughly chop the garlic and lightly fry for 5 mins to slightly soften. Whiz in a food processor with the creme fraiche to a fine grainy texture. You do not want a puree. Put the mix into an oven dish and sprinkle with the breadcrumbs. Bake at Gas 4 for around 50 mins until breadcrumbs are brown. Yum Yum. this recipe was given to me by the chef of an excellent restaurant in Provence. thank you benedict :-)
