moist light pumpkin tasty spicey pudding

  • double cream or custard
  • 1.5lb of fresh pumpkin
  • 10oz plain flour
  • 1tsp baking bicarbonate of soda
  • 10oz fresh breadcrumbs
  • 8oz sugar
  • 4oz shredded suet
  • 2tsps mixed spice
  • 1lb mixed fruit
  • milk
first cut your pumpkin in to 4 quarters peel and greet the flesh .place the greeted pumpkin in a large deep frying pan with a knob of butter cook the greet pumpkin until soft and place to one side. mix together flour bicarb and breadcrumbs sugar ,shredded suet and mixed spice then add mix fruit and the greeted pumpkin mix well . if the mix is to dry add some milk till well mixed but not to wet place the mix in a 1litre basin or several small pudding basins cover with greeseproof paper and tin foil .and place in a stream for 3 hours or until the pudding is cooked when cooked remove from the basin and cut and serve with cream or custard.
