Slow Cooker Sausage Stew with tomato and white beans

A vaguely Italian sausage stew for the slow cooker. This can cook while you're out, or even overnight and it's really tasty. My husband's favourite sausage stew!

  • 1 tsp olive oil
  •  
  • 1 pack good sausages, cut into bite sized pieces
  •  
  • a few rashers chopped bacon or pancetta (an oz or two)
  •  
  • 1 onion, chopped
  •  
  • 2 cloves garlic, chopped
  •  
  • 1 red pepper, sliced
  •  
  • 1 tin chopped tomatoes
  •  
  • 1 large tin cannellini beans, rinsed
  •  
  • 3 tbsp chicken or veg stock
  •  
  • Bay leaf and thyme

Directions
Sausage Stew with tomato and white beans 1 tsp olive oil 1 pack good sausages, cut into bite sized pieces a few rashers chopped bacon or pancetta (an oz or two) 1 onion, chopped 2 cloves garlic, chopped 1 red pepper, sliced 1 tin chopped tomatoes 1 large tin cannellini beans, rinsed 3 tbsp chicken or veg stock Bay leaf and thyme 1. Heat oil in frying pan, add sausages and bacon / pancetta and cook on medium heat until lightly browned. Put sausages and bacon / pancetta in the slow cooker, drain off most of the fat. 2. Add onion and fry approx 5 mins, followed by the garlic and sliced pepper for about a minute to soften. Add these to the slow cooker, and then add the tinned tomatoes, beans, stock and herbs. Season and stir. 3. If your slow cooker has an auto setting, then put it on auto and leave for around 6-8 hours. If not it's best done on high for the first hour and then switch to low for the rest of the cooking time. Or cook on low for 8 - 9 hours and heat the toms and stock in the pan with the garlic and pepper before adding to the SC. Some newer SCs seam to run a little hotter than the old ones, so cooking times may differ depending on which model you're working with.
