Poached berries in red wine
This is a firm favourite of Steven, our Senior Chef. It's quick and simple yet utterly delicious, especially when served with panna cotta or even a generous dollop of ice cream.
Method
Place the star anise, wine and sugar in a pan over a medium heat until it begins to develop large bubbles.
Add the fruit and cook until they have softened and the liquid has become syrupy.
Enjoy with a creamy panna cotta or simply spoon over ice cream for a midweek treat!
Ingredients
2 handfuls of soft fruits or berries or 2 medium sized sticks of rhubarb, cut into chunks
2 star anise
100ml red wine
75g sugar
