Purple sprouting broccoli with chilli and garlic
Purple sprouting broccoli or PSB is a River Cottage favourite. Our Culinary Director Gelf has shared this tasty recipe, while the marinating does require some pre-planning the cooking is very quick and simple. This is a perfect light supper served with goats cheese or smoked fish.

Method
Combine the broccoli pieces with the chilli, garlic, lemon zest and rapeseed oil and allow to marinate for 6-8 hours.
Heat a heavy-based pan until lightly smoking, add all the marinated ingredients, sautéing until everything starts to gain colour, it’s important to keep the veg moving in the pan so the garlic and chilli don’t burn. Season to taste and sprinkle with the fresh coriander and pumpkin seeds and serve straight away.
Ingredients
500g of purple sprouting broccoli, chopped into bite-size pieces
2 cloves of garlic, thinly sliced
1 red chilli, thinly sliced
1 bunch of coriander, finely chopped
50 ml light rapeseed oil
1 lemon, zest
20g pumpkin seeds
