Spiced apple Bellini

Try this homemade spiced apple compote recipe - mix with River Cottage sparkling wine for a festive Bellini!

Method

Add all of the ingredients into saucepan and put on a medium heat. Add a splash of water and cook on a low heat stirring regularly until the apples have completely broken down, pour into a sieve and scrape the apples through - this will give you a smooth puree as well as removing the spices and herbs. Allow to cool completely and then refrigerate.

To serve, pop a dessert spoon of compote in the bottom of a champagne flute and pour over chilled River Cottage sparkling wine, give it a gentle stir and then enjoy!

Ingredients

For the compote

2 decent sized Bramley apples, peeled, cored and cut into 2 cm chunks

½ stick of cinnamon

2 star anise

2 pods cardamon

2 bay leaves

2 sprigs of thyme

1 tblsp soft brown sugar or honey
