Wild fennel vodka & tonic

This cocktail was a drink of the month in the Axminster Kitchen. Why not pop in and try one.

Method

Begin by infusing the vodka. Add wild foraged fennel (as much or as little as you fancy) to the vodka and leave in a cool place for 2 weeks.

To make the wild fennel vodka & tonic, add a generous portion of ice to a highball.

Pour in the vodka and top up with tonic water.

Garnish with a sprig of fennel.
