Gelf's top picnic picks

We caught up with River Cottage Culinary Director, Gelf, to get some of his top picks to take with you on a picnic. These recipes are classics, all with a delicious River Cottage twist.

With the lovely weather we’re having at the moment, comes the joy of eating outside! Picnic blanket in tow and a cool bag on our arm – it’s one of life’s simple pleasures to be heading outside and enjoying delicious food and drinks in the great outdoors. Here are some of Gelf's top picnic picks to whip up and take with you:

Split pea hummus with leftover veg -

Traditional hummus is made with chickpeas, but here at River Cottage we love making dippable purées with fresh vegetables too. This British split pea hummus also makes the most of your leftovers! Whip up a jar full to pop in your picnic basket and serve with crudités, warm garlicky flatbreads or pitta and salad leaves.

Potato salad with apples and Cheddar -

"As a kid, when I got home from school I used to snack on apples, Cheddar and mayonnaise. It wasn't conventional and my mother was forever wondering where all the mayonnaise was going. As I grew older, I folded this delicious combination in with another favourite - new potatoes - to get the best of both worlds. This remains my go-to dish for any occasion, from picnic to barbecue."

Oaty nutty chocolate 'Tiffin' -

Tiffin is a classic crowd-pleaser – and this recipe gives this family favourite a virtuous twist. These lovely tiffin squares are quite ‘melty’ on a very warm day. For a more portable version, omit the coconut oil and ginger.
